Turmeric Rice Salad
If you’re looking to turn your salad into a full meal, a great way to do that is by adding grains, like rice.
In this Turmeric Rice Salad, we add our turmeric rice to a Mediterranean inspired salad. It adds a beautiful colour, superb texture and a lot of nutrition that will keep you full!
- Use2 cups of rice from Turmeric Rice
- ¼ cup olives
- ¼ cup chickpeas
- ¼ cup cucumber chopped
- ¼ cup tomato chopped
- 2 tablespoon feta
- 1 cup spinach
- Combine ingredients in a bowl and combine like a salad.
We added our favourite dressing for an extra bit of flavour: it is the perfect combination of zing to complement the Mediterranean ingredients.
- 1 Tablespoon olive oil
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 1 tsp turmeric latte blend
- 1 tsp garlic
- 1 tsp honey
- Combine ingredients and stir thoroughly.
- Drizzle dressing over and stir through.
