Delicious Pumpkin Soup
As the weather in Western Australia starts to cool, we can’t help but begin to think about soup! And our favourite is… you guessed it. PUMPKIN!
Our pumpkin soup packs a punch with hints of curry powder, tasty garlic flavour, and our potent Turmeric Blend. It is all kinds of good for you!
- 1 Butternut Pumpkin
- 2 Potatoes
- 2 Carrots
- 2 tbs Turmeric Latte Blend
- 4 cups Vegetable Stock
- Salt Pepper
- 2 cloves of Garlic
- 1 ½ tsp curry powder
- 1 Onion
- ½ cup Coconut milk
- Place peeled pumpkin, carrot, potato, onion, garlic, curry powder, turmeric, broth/stock and water into a pot; Boil rapidly for 45 minutes until the pumpkin is very tender;
- Use a stick blender or transfer to the food processor to blitz smooth;
- Adjust salt and pepper to taste, then add either coconut milk OR cream – whichever you prefer.
Serve with tasty garlic bread or butter on toast to finish this perfect meal.
